Cooked, they're like potatoes, uncooked more like water chestnuts. They get their texture from inulin fiber rather than starch, and so are also a nice potato different for diabetics. And they offer pretty flowers up high and grow so simply they can turn out to be an invasive weed. We love 'em on the grill, where you'd swear you were simply consuming grilled potato wedges.
